In the heart of the Val d’Illasi, at an altitude of 250 meters, in a hilly area about 2 km from the medieval Rocca d’Illasi, lies Monte Pistoza, a land always dedicated to farming. In the early days, these areas were used for orchards and various crops to meet the needs of the townspeople; in a second phase, the area was used for vineyards and olive groves, which are now historic and of inestimable value The Sabaini family has been able to enhance this history and quality and to express it fully in this unique Cru (Monte Pistoza); from the vineyards where the grapes dedicated to our Valpolicella Superiore wines are born and grow.
VINEYARD
The Monte Pistoza vineyard is located in one of the most renowned areas of the Illasi Valley for the production of excellent red wines, characterized by finesse, elegance, and longevity.
The vineyards are 250 meters above sea level, facing northeast and south, and are about 30 years old. The soil is calcareous-clayey, with a high content of skeletal remains and tufa, fundamental elements for obtaining an ideal terroir for the growth of the native Corvina, Corvinone, and Rondinella wines.
WINES
Sabaini Valpolicella DOC Superiore: this is Cantina Sabaini’s most important wine, made from fresh grapes, carefully harvested in October when they are perfectly ripe; the best grapes are harvested. The wine rests in French oak barrels of second and third passage for about a year.
