Collina d’Illasi red berry vineyards

Our red berry vineyards located in the hilly area of Illasi have a history of almost 60 years, in the province of Verona, at an altitude of about 175 meters and with exposure to the Northeast, and South. These soils are very deep and are characterized by high drainage, favored by the medium texture of the alluvial soil with the presence of a skeleton; in fact, its main characteristic is the presence of gravels and sands deposited after the historic flooding of the Progno stream, with occasional outcrops of tuffs and basalts.

The Illasi River, more commonly known as the Progno, has its source in the rocky walls of the Carega Group and crosses no less than seven municipalities along its course, for a total length of 35 km.

The climate of this valley is temperate, and in the past, it was mostly characterized by drought and low rainfall, which is why it was called Valsecca Precipitation tends to be concentrated in the autumn and spring, when the river Progno rises, causing considerable devastation.

LAND/CLIMATE

The Collina d’Illasi vineyards are located in the village of Illasi. They are 175 meters above sea level and face north-east. The soil of medium-flood pasture is characterized by the presence of a skeleton favored by its proximity to the Progno d ‘Illasi stream. The vines are grown following the traditional Veronese pergola system. The varieties grown in this area are Corvina, Corvinone, Rondinella, and Molinara.

ILLASI HILL RED GRAPE VARIETIES

Wines from these areas are characterized by fruity, mineral and spicy notes. Notes given by this particular alluvial-calcareous terroir.

The wines we obtain from these grapes are:

  • Rosé Spumante Brut IGT: fruity and delicate with a bright pink color. Molinara grapes are harvested in September to preserve a good and important freshness and acidity. The crushing and destemming of the milling grapes takes place at a controlled temperature between 16-18°C, it ages in stainless steel tanks for about 3 months in contact with fine lees and yeasts. It is then sparkling in an autoclave for about 60 days. Its fine perlage is great for aperitifs, fresh dishes and fish.
  • Corvina Veronese IGT: young red wine, fruity ruby red with violet reflections. The harvest of Corvina grapes occurs in October when the perfect phenolic ripening is achieved. After crushing and destemming, maceration and fermentation occur at a controlled temperature of 22-26 C for 8-10 days. This is followed by soft pressing and refinement in stainless steel tanks until bottling, a wine that goes well with hearty first courses, all types of meat and cheese.
  • Valpolicella Doc: a young, fruity red wine with aromatic notes, obtained from Corvina, Corvinone, and Rondinella grapes. The harvest occurs during October when the perfect phenolic ripening is achieved. After crushing and destemming, maceration and fermentation occur at a controlled temperature of 22-24 C for 8-10 days. This is followed by soft pressing and refinement in stainless steel tanks until bottling. It is a fine, elegant, and persistent wine; excellent with tasty first courses, red meats, and cheeses.
