DESCRIPTION OF 2015 VINTAGE

2015 can be compared to the prestigious 2000 vintage, evaluated with the maximum score of 5. Spring was warm but not excessively dry, with scarce but regular rainfall. A hot summer came slightly early, while the autumn offered the perfect conditions for the health of the vines and the perfect ripening of the grapes. The winter was mainly snowy, which helped maintain water reserves in optimal conditions until the harvest. This resulted in particularly intense, complex wines with a distinctly fruity profile.

PRODUCTION AREA

Monte Castello d’Illasi and Monte Tomelon vineyards in the Val d’Illasi, province of Verona. Altitude 250-460 m a.s.l., North-East and South aspect. Pergola Veronese and Guyot training system. Limestone soil with tufa and marl. Yield approx. 80 q/ha.

HARVEST

This Riserva is produced only in the finest years. Finest bunches selected and harvested by hand during the month of October, at the peak of their phenolic ripeness. The grapes are placed on racks and left to dry, to boost the concentration of the sugars, aromas, extracts and glycerin.

VINIFICATION

The grapes are dried for 5 months, then fermented on the skins, with maceration lasting 3-4 weeks. The wine is then aged in French oak barrels and barriques for 36-48 months and subsequently in the bottle for 12 months.

16,5 % Vol.

COLOUR

Intense ruby-red with garnet reflections.

AROMA

Polished, spiced notes of red fruit preserved in alcohol, and chocolate.

FLAVOUR

Intense, complex, lingering and perfectly balanced.

PAIRINGS

Excellent with red meats, slow-cooked stews and mature cheeses.

SERVING TEMPERATURE

18°C – 20°C.
